french toast, peaches & caramel

  I think the recipe title says it all. Ok I will say ONE more thing: use common sense – if peaches aren’t in season, use another fruit such as apples. Duh. Do not, I repeat DO NOT use peaches in a can. I will hunt you down…

 
 
 ingredients:

you will need:

4 pieces of French bread, cut into thick slices (a good brioche works nicely too – thick is the key word)

½ cup whole milk

1 egg

Pinch of salt

1 Tbs white sugar

½ tsp vanilla extract

Pinch of cinnamon

1 Tbs butter

2-3 peaches, peeled and sliced

¼ cup store bought caramel sauce

Whipped cream and/or powdered/icing sugar

Cooking spray

 
 method:

In a shallow bowl, combine milk, egg, sugar, vanilla, salt and cinnamon. Mix with a whisk or a fork until everything is smooth and well combined.

Place the French bread in the batter and flip a few times. Shake off excess batter and place on a baking tray or plate.

While bread is soaking up the batter, place butter in a sauté pan and heat until melted. Add the peaches and cook for about 5 minutes, stirring occasionally. Once peaches are softened slightly, add the caramel sauce and stir. Remove from heat and set aside.

Heat another sauté or fry pan and spray with cooking spray. Once pan is just hot, carefully place the battered bread in the pan and cook until just golden brown. Flip with a spatula and repeat on the other side. Remove from pan and place 2 pieces of bread onto 2 plates. Top with peach/caramel sauce and either sprinkle with icing/powdered sugar or top with whipped cream…or both! Yum!
