banana muffins
    Makes 12 normal sized muffins, makes about 32 minis, or 1 loaf.

  I always used to get so depressed looking at overripe nanners in a fruit bowl. Not so anymore, because it’s just the perfect excuse to make up some batter and create something totally delicious. Great for the freezer and perfect for a quick breakfast. Feel free to add some chopped nuts and/or chocolate for more umph!
 
 
 ingredients:

you will need:

2 cups all-purpose flour

1 tsp baking soda

½ tsp salt

½ cup unsalted butter

¾ cup brown sugar

2 eggs, lightly beaten

1 tsp vanilla extract

2-3 mashed overripe bananas

 
 method:

now make your muffins:

Preheat oven to 350 F/ 175C.

In a medium mixing bowl combine flour, baking soda and salt. Mix to combine. Set aside.

In a large mixing bowl combine butter and sugar and cream until smooth. Add eggs and vanilla - stir to incorporate.

Add dry ingredients to wet ingredients and mix, then fold in bananas (and your choice of nuts and chocolate, optional).

Pour batter into a greased muffin or loaf tin. Bake the loaf for about 60 mins, the muffins about 18-20 minutes and the minis about 15. Enjoy!
